Cuisine is a cultural construction that brings together people and their traditions.
At Can Boix de Peramola, we like to feel that eating is a true joy, the expression of a link with life itself that manifests in a landscape that welcomes and surrounds us.
I am a chef who understands the creativity of imaginative work, but I am also respectful of the jewels that nature offers us. My approach is with an artisan’s hands and spirit, striving to preserve and highlight the treasure of scents, flavours and colours of the products of the earth that we want to be part of the soul of our dishes.
There’s no innovation or quality in gastronomy that starts from nothing. Like a courageous tree that rises towards the light, it must also sink its roots deep into the earth. That’s our experience with cuisine, aware of where we come from and where we are, celebrating the treasures that are for us the products of nature and looking beyond, because we want to open our paths without losing our personality.
